The Kitchen
The Edge celebrates what this region is capable of — with a kitchen committed to letting great ingredients speak for themselves.
Menus are built from the ground up: season by season, producer by producer, guided by what is extraordinary right now and how to honour it with care and as little interference as possible.
Almost everything on the plate comes from within the Okanagan and broader Canadian regions. Not as a claim, but as a reflection of how this kitchen actually works.
Chef Sanat Kapila
Executive Chef
Sanat Kapila has spent a decade cooking across fine dining restaurants, remote seasonal lodges, and independent pop-ups. Over time, his focus has shifted from complexity to clarity — building food that feels grounded and considered, that reflects the place it comes from, and that respects the people who grew, raised, or foraged each ingredient.
He leads a kitchen where preservation and fermentation are tools for stretching the season, where restraint is a form of respect, and where the goal is always honesty: thoughtful food, made with care, for guests who notice the difference.
Our Producers
The menu at The Edge is built on relationships. These are the farmers, foragers, millers, fishmongers, and makers whose work arrives in our kitchen every week.
The Wine Program
The wine list at The Edge is rooted in a genuine belief in the Okanagan and the exceptional wines being produced right here in the valley.
We focus on local producers first, supported by a thoughtful selection of international wines for those looking to explore further. Through our Coravin program, we’re able to offer premium and limited bottles by the glass—opening up wines that are typically only available by the bottle.
Whether you know Okanagan wines well or are just starting to explore them, the list is designed to be approachable, interesting, and rewarding to discover.
Melanie Kronbauer
Wine & Hospitality
The wine program at The Edge is shaped by Restaurant Manager – Melanie Kronbauer, a longtime part of the local hospitality community. Her influence is subtle but deeply felt—built through years of leading refined dining rooms, developing thoughtful food and wine programs, and travelling extensively through wine regions around the world.
With formal WSET wine certifications and a hands-on understanding of the industry, Melanie brings both knowledge and instinct to the list. It’s less about curation and more about connection—wines chosen by someone who genuinely loves what’s in the glass.
You’ll often find her on the floor. Ask her anything.
The Cocktail Program
The bar at The Edge is built on the same values as the kitchen: local ingredients, honest technique, and a strong sense of where we are.
The cocktail menu draws on local and premium spirits, house-made infusions, and fresh seasonal ingredients to build drinks with clean flavour and real depth. Each cocktail reflects the Okanagan — its produce, its character, and its seasons.
Zero-Proof
The zero-proof menu draws from the Okanagan’s seasons as freely as the kitchen does. House-made infusions, fresh local ingredients, and premium alcohol-liberated spirits come together in drinks that are layered, alive, and worth lingering over.
